I bought a new (to me) cheese yesterday called Ricotta Salata. It's Italian for salted Ricotta. It's kind of like a dry feta cheese, except not as salty. I can't stop munching on it. It's ridiculously good if, like me, you like stark-white, hard, crumbly, dry cheeses with a subtle taste.

I always thought ricotta was moist!
ReplyDeleteI had this amazing feta from Global Cheese the other week. It was barrel-aged feta, it tasted amazing, though maybe too strong for the subtle-taste-oriented among us.
I want to try that Ricotta Salata.
This Ricotta Salata is a hard, dry type of Ricotta, though regular Ricotta is moist and soft as hell.
