Ricotta Salata

I bought a new (to me) cheese yesterday called Ricotta Salata. It's Italian for salted Ricotta. It's kind of like a dry feta cheese, except not as salty. I can't stop munching on it. It's ridiculously good if, like me, you like stark-white, hard, crumbly, dry cheeses with a subtle taste.

  1. I always thought ricotta was moist!
    I had this amazing feta from Global Cheese the other week. It was barrel-aged feta, it tasted amazing, though maybe too strong for the subtle-taste-oriented among us.
    I want to try that Ricotta Salata.

  2. This Ricotta Salata is a hard, dry type of Ricotta, though regular Ricotta is moist and soft as hell.

  3. Are you crazy? Your ricotta salata is at least twice as salty as feta.

    And ricotta salata is the cheese that was on your eggplant pizza at Libretto, Caroline.
