These are terrible for you and make the apartment smell like Fran's, but here's the recipe for the vegan onion rings I just made. I don't know where my camera is, so no pictures! Totally stolen from someone else's blog.
1 onion, sliced into rings
1/2 cup white flour
1/3 cup cornmeal
1/3 cup water
1 tbsp white vinegar
Black Pepper
Salt
Oil for frying
1) Heat a bunch of oil in saucepan. You can also use a deep fryer if you have one.
2) Mix flour, cornmeal, water, and vinegar. Add enough extra water to get a semi-runny batter. Add salt and pepper to taste.
3) Coat rings, and throw into oil. Fry until golden brown, flipping if you're like me and don't want to use a tonne of oil on one project.
5) With slotted spoon, remove from oil onto paper towel-covered plate/colander over plate.

I will try this method next time I fry! I like the idea of making a batter that has all the wet/dry ingredients combined. I always attempt to do a foolish multi-step batter process that goes like: dip in liquid, dip in flour, dip back in liquid, dip in cornmeal/breadcrumbs/whatever. This NEVER WORKS and makes half the coating pathetically fall off.
